'உணவை வீணாக்கக்கூடாது' என்ற கொள்கையை மிகத்தீவிரமாக கடைபிடிப்பவர்கள் சில ஹோட்டல் முதலாளிகள்தான். தங்களின் ஹோட்டலில் எந்த உணவு மீதமானாலும் குப்பையில் கொட்டாமல் அதை 'ப்ரஷ்' ஆக்கி மீண்டும் சாப்பிடும் டேபிளுக்கு கொண்டுவந்து விடுவார்கள்.

சுத்தம் சோறு போடும் என்பது சொலவடை. ஆனால், சில ஹோட்டல்களில் அசுத்தம்தான் சோறு போடுகிறது. அந்த அளவுக்கு சமையலறை, ஊழியர்கள் என்று எங்கும் அசுத்தம் பரவி இருக்கிறது. இதெல்லாம் தெரிந்தும் அலட்சியத்துடனும், சகிப்புத்தன்மையுடனும் அதுபோன்ற ஹோட்டல்களுக்கு செல்பவர்களும் இருக்கிறார்கள். அவர்களாலேதான் அதுபோன்ற ஹோட்டல்கள் பெருகி வருகின்றன.

உணவை வாழை இலையில் வைத்து உண்பது நமது முன்னோர்களின் பழக்கம். அப்படி உண்பவர்கள் நீண்ட ஆரோக்கியத்துடன் வாழ்வதாக முன்னோர் நம்பினர். வாழை இலையில் உண்பதால், உணவை சக்தியாக மாற்றும் ஒரு மருதுவமுறையும்கூட. பலகாலமாக பின்பற்றப்பட்டு வந்த அந்தப் பழக்கம் இன்று ஹோட்டல்களில் இல்லை. எல்லாம் பிளாஸ்டிக் மயம். பின் எப்படி ஹோட்டல் உணவு ஆரோக்கியத்தைக் கொடுக்கும்?

வீட்டில் மீதமான உணவை குப்பையில் கொட்ட மனமின்றி ப்ரிட்ஜில் வைத்து, தேவையானபோது எடுத்து சூடு பண்ணி சாப்பிட்டு சலித்தவர்கள், ஒரு மாற்றத்திற்காக ஹோட்டல்களுக்கு செல்லும்போது அங்கேயும் அதே டெக்னிக்கைத்தான் பயன்படுத்துகிறார்கள் என்பதைப்பற்றி யோசிப்பதே இல்லை.

கல்யாண வீடுகளில் எதிர்பார்த்ததைவிட கூட்டம் அதிகமானால் இருக்கும் உணவுகளில் சில 'ரெடிமேட்' வேலைகள் செய்து நிலைமையை சமாளிப்பதைப்போன்ற சம்பவங்கள், சில ஹோட்டல்களில் அடிக்கடி நடக்கும். எனவே கூட்டமாக செல்வதாக இருந்தால் முன்பே ஆர்டர் செய்துவிடுவது நல்லது.

சில ஹோட்டல்களில் முதலாளியும், ஊழியர்களும் வீட்டிலிருந்து கொண்டு வரப்பட்ட உணவை வாடிக்கையாளர் முன்பே உண்பதும் ஒரு குறியீடுதான். அதுகூட புரியாமல் அங்கே தொடர்ந்து செல்பவர்கள் முட்டாள்களாத்தான் இருக்க முடியும்.

ஹோட்டல்களில் உணவு சூடாகவும், சுவையாவும் இருந்தால் மட்டும் போதாது. சுத்தமாகவும், ஆரோக்யமனதாகவும் இருக்கவேண்டியது அவசியம். சுடுநீர் வைப்பதைத் தவிர எல்லாவற்றுக்கும் விதவிதமான பொடிகள் பயன்படுத்தப்படுகின்றன. இவற்றால் ஏற்படும் உடல் உபாதைகள் பற்றி நமக்கு விழிப்புணர்வு இல்லை.

ஹோட்டல் நடத்துபவர்கள் மலிவு விலை காய்கறிகளையும், உணவுப்பொருட்களையும் வாங்கி சமைத்து லாபம் பார்க்க ஆசைப்படுவார்கள். அன்றைய தேதியில் மார்க்கெட்டில் எந்தக் காய்கறியின் விலை மலிவாக இருக்கிறதோ அதுதான் 'இன்றைய ஸ்பெஷல்' லிஸ்டில் முதல் இடம் பிடிக்கும்.


அவசியமே இல்லாவிட்டாலும்கூட அடிக்கடி ஹோட்டலுக்கு செல்லும் பழக்கம் உள்ளவர்கள், அடிக்கடி மருத்துவமனைக்கும் செல்ல வேண்டி இருக்கும் என்பது கசப்பான உண்மை. சில ஹோட்டல்களின் தரம், அங்கு சாப்பிட வரும் ஆட்களை, விலை கொடுத்து உடல் உபாதைகளை வாங்கும் நிலையை ஏற்படுத்துவதாகவே உள்ளது.

எல்லா ஹோட்டல்களும் 'உயர்தர உணவகம்' என்று போர்டு மட்டும் பெரிதாக வைத்துள்ளன. ஆனால், சில ஹோட்டல்களில் பரிமாறப்படும் உணவுகளில் எந்தத் தரமும் இல்லாத காரணத்தால் 'உயர்தர' என்ற வார்த்தைக்கே மதிப்பில்லாமல் போய்விட்டது.

போட்டிக்கு ஆளில்லாத இடங்களில் இருக்கும் ஹோட்டலுக்கு செல்வது பெரும்பாலும் கொடுமையான அனுபவத்தையே கொடுக்கும். அந்த இடங்களில் அவர்கள் தருவதுதான் உணவு. அவர்கள் நிர்ணயிப்பதுதான் விலை. இரவு நேர பேருந்துப் பயணங்களில் இது போன்ற ஹோட்டல்களை நாம் பார்க்கலாம்.

உணவே மருந்து என்ற வாழ்க்கை முறையில் வந்தவர்கள் நாம். ஆனால், இன்று ஹோட்டல் உணவை உண்டாலே சீக்கிரம் மருந்துகளுக்கு அடிமை ஆக வேண்டிய அவலநிலை ஏற்பட்டுள்ளது. உணவை பணம் சம்பாதிக்கும் பெரும் வியாபாரமாக பார்க்கும் ஹோட்டல் முதலாளிகளிடம் தொழில் தர்மம், சேவை மனப்பான்மை போன்றவற்றை எதிர்பார்ப்பது அபத்தம்.

முதலாளிகள் தங்களின் ஹோட்டலுக்கு அடிக்கடி வருபவர்கள் நல்ல ஆரோக்யத்துடன் இருக்கவேண்டும் என்று நினைத்து செயல்பட வேண்டும். பணம் சம்பாதிப்பதை மட்டும் நோக்கமாகக் கொண்டு உணவின் தரத்தில் கோட்டைவிடும் ஹோட்டல்களை கண்டுபிடித்து அரசு நடவடிக்கை மேற்கொள்ள வேண்டும்.

இதுபோல ஹோட்டலுக்கு சென்று உண்பதில் சிரமங்கள் இருந்தாலும், பணத்துக்காக மட்டுமல்லாமல் ஹோட்டல் நடத்துவதை ஒரு சேவையாக, நேர்மையான தொழிலாக நினைக்கும் முதலாளிகளும் உண்டு. அப்படிப்பட்ட ஹோட்டல்களை தேடிக் கண்டுபிடிப்பது நமது புத்திசாலிதனம் மட்டுமல்ல ஆரோக்கியமும்கூட.

உணவை வாழை இலையில் வைத்து உண்பது நமது முன்னோர்களின் பழக்கம். அப்படி உண்பவர்கள் நீண்ட ஆரோக்கியத்துடன் வாழ்வதாக முன்னோர் நம்பினர்.

We have been repeatedly saying this. Per report, at the time of independence, the average life expectancy was below 35. Is there any proof to the above statement?

Now, it has reached 70, due to various factors like advanced medical treatment, exercise, diet control.

நிற்க! ஐந்து நட்சத்திர ஹோட்டல்களில் மட்டும் என்ன வாழ்கிறதாம்?

Inspite of all laments about cleanliness etc , the numbers thronging the hotels for food is only increasing.

In delhi, In andhra pradesh bhavan , literally thousands [one time 250-300 can be fed] have full meals andhra style for about Rs 100 plus. It is subsidised . The wait time

on sat/sun is upto 20 minutes. It is patronised by all south indians including tourists from south. While saravana bhavan meal costs twice that also attracts people

[northerners also]. The meals are taken by south indians and dosa ,idly by north indians.Here also there is a queue with similar wait times on holidays.

Irrespective of status of kitchen or fear of dengue, people are preferring to eat at hotels and not eat food cooked hygenically home.

Most have a mindset that as we have survived so far consuming all types of things, so food at hotels is OK if we do not end up with food poisoning which happens at

times

my grand parents had famous hotel for more than 40 yrs in chennai....the old ppl were very good in quality and cleanliness...

i used work in my uncle's hotel during my college holidays....i know some inside story too......olden days tambrams used

to work and run hotels.....very disciplined and human touch too..now a days..its hard to see ...quality degraded and quantiy

increased....its my observation in chennai hotels....ONCE BRAHMANAAL HOTEL DONE WELL...

It is not that Mindset . The Mindset is that women refuse to cook and fed up of cooking and it is definitely a NO NO during weekends . So now the Male has 3 choices :
1)Cook food himself ( and also clean the kitchen ,utensils ) ,
2) order food from outside ( and also clean the Utensils, Kitchen etc ) or
3)go outside and have food . This third option is mostly exercised as it does not involve cooking the food , cleaning the kitchen /Utensils plus each person can have their own choice of Hotel and food and it can also be changed every week . Plus in India going out with the family is possible during weekends and many prefer to eat outside and go around watching movies or doing shopping as that is the only outlet for unwinding for most middle class people .
 
brahmin cooks can make a few hundreds if they cook in 3 to 4 four homes on weekends.

In delhi Rotis are homemade and distributed in sealed packs 5 nos for 15 rupees with date of packing stamped on them. they get delivered in shops every evening by 5pm.

it is boon for house wives and working types , they save on evening cooking.Others recycle morning food.

Hindustan Lever and other companies have also come with such sealed chapatis with date mentioned and it is available in most shops and apart from Chapatis even Parotas ( Chennai Parota ) are also available in sealed packs . I think some companies have also started Frozen Parathas ( North Indian Parathas ) that can be easily cooked . Cut Vegetbales , Ready Made food are fast selling products .

in USA....ready to cook vegetables are cheaper than normal....ready made chapatis available in all indian groceries/some

american groceries too....in general....hotel foods are very costly...so ppl cook in the home...

I very much resonate with the above line based on the experiences of few of my family members , relatives who post retirement deicded not to cook food and either get food from outside caterers or eat in Hotels or do a mixture of both .Cooking in their house stopped to NIL and the only time they used the Gas was to boil milk for tea or coffee or hot water or to make noodles ( which has also now been banned in India ) . They were making fun of those who were cooking saying they do not want to waste time buying vegetables , cooking the food , then cleaning the utensils and also the kitchen and repeating it daily and that they have conveniently outsourced the cooking . One of my Uncle and his wife was doing this from 65 years to 75 years i.e 10 years and the problem started after 10 years when he was constantly being admitted to the hospital and since their children were abroad for quality care they were always admitted to a Premier Hospital in Chennai and every 3 months he will have a problem , the ambulance will come take him get him admitted for 1 week to 10 days and an excellent bill of Rs.2 - Rs.2.5 lakhs per visit was being paid and added to this his son would have to rush in from USA buying the available ticket and he made like this 3-4 visits and in the end my uncle died after a hospital bill of around Rs.15-Rs.20 lacks in the last 2-3 years and an extra 10-15 lakhs his son and his family had to shell out for his flights at short notice . My uncle's main problem was that he had a body that had no nutrients at all . Since he never smoked and drank or had any vices his organs were good but the last 10 years of outside food made his body undernourished and nothing was there in this body . So while Hotels and Outside food may be hygenic ( that is what is assumed ) but was is missed is they have a very poor nutritive content and many people do not take this in to account . Having food once is a week outside is OK but outsourcing the day to day food whether to a caterer or hotel or some Mama / Mami is dangerous and I have shared only 1 incident and will share the other incidents later .

So in end : No short cut for food in life . Once in week or so hotels or outside food is good . Best is home cooked food even if it is a simple food and supplement it with lots of fruits and other healthy nutritive products .Outside food howmuch ever neatly prepared or packed is filled with preservatives ( that may turn out to be harmful later ) and also lack nutrition ( especially good protein and good vegetables ) and this imbalance must be addressed or it will lead to problems later like it happened for my uncle and other close relatives during the last 1-2 years .
 
In india , even Tea , people do not get good leaf tea which are reserved for exports.

local get teabags stuffed with lower grade tea or crushed ,powdered tea which are poor quality.

even the elite drink locally made bad wine instead of good leaf darjeeling tea available at higher prices.

My formula to tackle this is to employ people to cook for senior citizens at their residence

If one takes inexperienced types , one can train them to meet ones needs.

This has worked excellently for me. I have used them for a decade.

One can always get one more , if a trained one goes away for bettering career prospects.

But as far as possible one should have an open mind and not reject a cook based on her caste . It is the cleanliness and hygiene that matter not caste or

colour of the skin of the cook
 
We can learn to eat fruits, bread, cereals, milk and curd during week ends! :decision:

Saves a lot on cooking gas, travelling expense to go to a decent hotel.

All the more, it saves our tummy from becoming 'Delhi belly'!! :cool:

Bread ,butter is part of the reserves in the frig to be taken at odd hours of night or day when hungry.

curd ,milk mixes are nice as lassi when one feels too lazy to add rice to it to make it thatchi mammu to be taken with pickles.

fruits , can be taken using teeth instead of knife.

all these are options to be exercised judiciously.

Whether you cook yourself or use outside cooks the main thing is take control of what you eat , how much quality protein and vitamins , minerals goes in to your food . These ( i.e quality protien , vitamins , minerals ) are the ones lacking in outside food . Healthy Nutrition is the watch word here . We are at such a horrible time when even the food and vegtables that we buy from market to cook our own food is filled with pesticides and lacks the necessary nutiritve content that we imagine ( for eg the Apples that we eat today buying from the Market has less than 50% Nutritive content than the apples that were eaten by people 50-60 years back ) . So even if we cook our own food we are not guaranteed the right nutrition and may have to take some form of supplements . But this is much better than outsouring our entire food outside to hotels , caterers , mama/Mami mess etc etc . So the more you are able to control the quality of the nutritive value of your food the best it is for you .
 
Cooking for oneself and one's spouse (wife/husband) should not be a problem for any brahmin so long as the person is not bed-ridden. The "eating out" syndrome has afflicted many and they consider it now as a mark of emancipation as also economic status.

My wife and I rarely, if ever, go to any hotel. We cook everything — breakfast, lunch, dinner and even the evening tiffin, when required. This is possible because we have a servant maid who cleans all the vessels; the eating plates are cleaned by the eater.

I believe that AFAP people should avoid hotels.

Bread, cakes, etc., are also not very hygienic, even if from great and well-known companies. Secondly, the gluten in wheat causes more diseases among souht indians who have had rice-based foods for generations.

Yes and I have quoted only one instace from my family and I can quote many cases of how much health problems other people have faced and still facing in my family and friend circles due to extensive eating outside .
People eating outside whether it is for status factor or having more disposable income I do not know but one thing is for sure - women ( young , middle aged , retired ) do not want to cook and hate cooking and so if the male is unable to either cook or help his wife in the cooking then they have no other alterantive but to eat out . I know of cases in my friends circle even if the wife is not employed she does not want to cook and if one day she cooks she takes rest for 2 days and they have to buy food outside or just cook rice and eat it with various Podis , Pickles , Rice Mixes, Chips that they get from outside .People are very lazy even to make curd in the house and buy ready made NESTLE CURD .This is the truth .
 
Bachelors are dependent on nearby Hotels for Lunch/ Dinner and on Week ends and holidays they take even Break Fast; without Hotels they will be put into lot of problems

Men should learn to be clean themselves first.

The younger types wear unwashed jeans and stinking under garments .

After cooking they normally leave the kitchen in a way that women in the house feel revenge has been extracted from them for not providing them a homely meal
