Hygiene in Serving Food in Weddings and Premium Hotels in Kerala and Tamilnadu

Hi,
I have just joined this group.
Briefly about myself : I am from Madras and now living in Melbourne. I have been out of India for about 20 years and have not attended any wedding or any such social celebrations during this period. We were thinking of planning our next visit to India so as to coincide with one of those functions and savour the "Kalyana Sappadu" once again.
But one forwarded mail received couple of days ago has disturbed me. Is this now the order of day ? can someone throw some light on this situation ?
The email itself :
Last week I was in Kerala and Tamilnadu attending two weddings, and eating at a few star hotels / restaurants
.
It was appalling to see the invitees being served food, batch after batch, without cleaning the floors. The excuse was “It is not possible to clean the floor after each batch”.


The floor was littered with the Droppings from all the previous batches because the cleaners employed to clean the tables were wiping the tables and dropping the stuff right under the table. An ugly, and un - appetising sight.


Even in premium Hotels, the cleaners were doing this

In one case, at a Brahmin Wedding, when a guest refused to sit at a table surrounded by such droppings, the caterer felt offended, and was ready to pick up a fight, and the host was helpless. Words like Etchal, Shubhram, Vritthi, were not making any impression on the caterer (also a Brahmin) He thought the Guest was being old Fashioned.


When awarding a contract to a Caterer for a major function, the host must insist that one cleaner with a brush, is assigned to keep the floor clean after every batch. Association of Caterers has a major role in ensuring this hygiene

I am not from India but I think this must be an isolated incident.

I am sure there must be some highly professional caterers too.

The best is to get some recommendation from someone known to you.

You are right. It should be an isolated incident.

I have been living in Chennai since 1972 and do attend Brahmins Wedding, but never come across any such incident reported in the O.P.

There are professionally good caterers with experience who take care of this assignment and execute very neatly cos there is a stiff competition in this field. Once you are proved that you are poor in service, you won’t get orders. So, in each wedding, the caterers try their best to provide better service, leaving no room for complain on hygiene and thus attract more customers.

Only thing I notice nowadays is that for reasons of economy, availability, etc some of parents book Wedding Halls which have dinning hall with limited space but do invite more friends, relatives, colleagues, etc. etc. In such cases, one can find the invitees waiting outside the dining hall for their turn to get seat to dine.
