Dear Subha Ji:

We all have adapted to a modern life style including using of other materials to cook other than clay, which is said to be the best, I read something about particularly Clay being the best in Sankarachariyaar's " Arul Vaaku" and always wondered why man has not made more of those rather than using aluminium or steel or china etc..

You are so right; I usually dont miss watching Paravai Muniamma's cooking show, which channel I forgot, and she cooks in clay pot and it looks so natural and simple. Think of another practical use for clay pots, it is so cheap and dispensable; during fierce fights the husband or wife do not need to be too terribly worried when either of them intend to use these pots as weapons!! After all how many you can break, and even if it is many, who cares :rockon:

Hahahahaa!!! that was funny and true too.. yes I have seen paravai Munnimaa cook in clay pots, I thought that was so good.. and my mom had a kal chatti or Kuchatti as she would call it.. the the molagootal in that kuchetti tasted like amritham.. so yummy.. I wish I had those with me now.. may be my next visit I should get one of each.. :-) I am still smiling at the thought of husband and wife throwing pots .. :-)) :rant: and arguing.. :)

I have heard that drinking water from a copper vessel is good for your health.. I hardly use the microwave, I know a lot of people use that for cooking on a regular basis, If I have a huge party say thirty people then I will add that as my cooking tool, and also heating, on a regular basis I don't like to use it.. I believe anything you over do is not good.. simple.. :-)
 
By the way Mr. Raghy, I like the term Chatti Rasam, sounds so much from a gramam.. my mom called one of the dishes chatti masiyal.. i love it.. :-)

I am indeed from a village. Rasam was essentially made in a chatti in the distant past, I suppose. Those cooking chattis have very thick base. The wall of the whole chatti would be much thicker than the chatti we use for storing water. The chatti should not be too old though. It takes a bit longer to cook in the chatti; but the rasam or kuzhambu stays hot for a long time too; and the unique mud taste mingled with the tamaring sour taste.... hard to explain though!

I think, the Chatti masiyal is refered to kalchatti, பயத்தம்பருப்பு masiyal. My mother never used onion in the cooking. Now when I make the same masiyal with nicely fried onions, the taste is just great! One of my wife's favourite....

sorry sir, when I said Gramam I did not say it in a condescending manner, I thought it was so beautiful and some of the things we remember either from village or city it is just the memories make me yearn for more of the same.. I was brought up in Madras but remember going to kerala and andhra pradesh villages.. both had their own unique quality. I think my mom used a real Kal chatti like I mentioned before.. it was not of clay, very thick and heavy.. I am not sure if that is being used by my SIL now but I loved the kootan any kind specially Molagootal.. with Murugakai.. or elavan meaning white gourd.. I think chatti masiyal was for Chepankizhangu masiyal, at least that is what I remember.. and Keerai masiyal.. O god I am getting so hungry now.. :-) miss my mom's and chithi's cooking so much.. and my MIL's also.. all great cooks.. My daughter and her husband have their own blog and introducing all mine and my MIL's recipes.. starting from Rasam.. of course this is for the folks who have not much clue of south indian cooking.. all the restaurants are mostly north indian.. :-)

When I think of 'kachchatti' the first item that comes to my mind is the 'puLikkAchchal' made in that... yummmmmmy taste!

After srAdhdham of our grand parents, mom used to put all left over curry and pitlai in the kachchatti and bring it to boil.

The most tasty mixed curry will be ready! At night, all the grand children (dad had three brothers) will sit in a circle. Mom

will make a big bowl full of thayir chAdham. The kachchatti curry will be kept with a spoon. She will place some thayir chAdam in

our hands, one after the other and we top it up with the 'curry' and eat! Still the scene is fresh in my memory!

What a jump, Pressure cooker to "Kalchchatti" ! Welcome change ofcourse.
In our house when we were young, our good old grand mother used only "Kalchchatti" to cook "Milagu Kozhambu".

Great Raji and Brahmanyan sir. nice dishes in a kachatti.. so yummy.. :-) Yes Raji, My mom used to make the pittlai also in that.. after I grew up I love Parikai pittlai or Pagarkai pittlai.. :-)

i remember my mom making rasam in 'eeyakundan'.
now we hear about lead poisoning.!!
i think we should go back to manpandam.
about aluminium please read this , which says about ss also
Aluminum Poisoning
as said therein the source of al is mostly from digestive aiding medicines.

In our house vegetable cooking is generally done in Pressure Cooker
mainly because it saves time and rapid cooking. Besides, it is
healthier, as ingredients vitamin do not go out.

I used to hate poosanikai and my mother used to hide poosanikai inside the thayir sadam and make me eat during several of these nila night events on the terrace overlooking kabali koil. I never knew it until she told me many years later!!

Perhaps my mom was the pioneer to coin the term ' முழு பூசணிகாயை சோற்றில் மறைத்தல்'!!

May her soul RIP...

புலவரே! உமது குறளில் குற்றம் உள்ளது. சொற்குற்றம் இல்லை; இருந்தாலும் அது மன்னிக்கப்படலாம். பொருளில்தான் குற்றம் இருக்கிறது. இந்த சபையில் சரியான பாட்டு விரும்பப்பட்டால் அதைக் கண்டு சந்தோஷிப்பவன் நான்தான்; இந்த சீரிய அவையில் குறையான பாட்டு விரும்பப்பட்டால் அதைக் கண்டு வருத்தப்படுபவனும் அடியேன்தான்! ;)

There is no need to feel sorry. I only acknowledged your words. Gramam is a nice word. I am from one too! It's absolutely fine. Kindly feel free! As far as I know, all the masiyals are done with பயத்தம்பருப்பு only. It doesn't matter whether one adds cheppankizhangu or potato! Usually it comes out tasty either ways! ( I do get frozen cheppankizhangu; also fresh cheppankizhangu too! I don't miss kal chatti at all; my cooking vessel has a very thick copper base. Masiyal comes out very nice. மசியலைக் கடைவதும் இல்லை. Paruppu gets cooked really well and gets mashed in the masiyal! ( Listen, I have no desire to make masiyal tomorrow. I have really good புடலங்காய் for cooking tomorrow!

Shri KRSji - Post # 25 - A coin has two sides so has science. If there is villain science the hero science can not be far ahead. I will classify science into two classes. One is intended to do good (Hero) and the other attendant on it with side or bad effects is villain. For instance, in pharmaceutical parlance the drug paracetamol has been considered a wonder drug. But now the same with other drug/s is not recommended. To the best of my knowledge there is no allopathy drug which does not cause GI intolerance. Every industry science created has solved problems but it has created new problems which all have contributed to today's environment and ecological problems. Without fertilizers man had been giving manures to the fields. I agree ayurvedic medicines are reported to have higher content of mercury. Both systems contribute to human welfare. But still I will say science defeats one problem but loses in the next round. I have not said science is a villain; only it has a villain side. Regards
